Recipe: All Natural Super Wicked Good Dessert  
Good recipe for the next time you're trying to accomodate a table full of vegans, gluten-free folks and people who don't want to give up flavor in their desserts while accomodating the above.

The Original Recipe
"Tastes Like Hostess Crumb Donuts" by Lucy Yeh

My version (which is unbelievably stinky good):

1/2 c. almond meal (in the Baking section at Trader Joe's - if you have a food processor, you can also just grind up raw almonds (can soak these in water first to make them easier to work with))
1/2 c. organic pitted dates
1/4 c. shredded crooked neck yellow squash (or any squash that can be eaten raw and has a fairly bland flavor)
1/4 c. shredded unsweetened coconut
splash olive oil
1/4 tsp. vanilla (or to taste)
1/4 tsp. salt (or to taste)
1/4 tsp. nutmeg (or to taste)

Shred squash, set aside.
Blend dates, almond meal, olive oil, vanilla and salt in blender.
Put mixture in bowl, add shredded squash, shredded coconut and nutmeg.
Mix together with hands or spoon until everything is moist.
Roll into balls and roll that around in some spare shredded coconut.
Chill in the freezer until firm. Be sure to set aside some "batter" for instant gratification eating ;)

Healthy serving size for 1 (about 5 pieces). Double for 2 people, etc.
